The most commonly found varieties of dragon fruit have either white or a vibrant magenta-pink flesh, both speckled with tiny, crunchy black seeds.
- White-fleshed dragon fruit (Hylocereus undatus): This is the more common variety found in Cambodian markets. It has a milder, subtler sweetness often compared to a blend of kiwi and watermelon.
- Pink-fleshed dragon fruit (Hylocereus polyrhizus): The less common but more flavorful variety, its vibrant pink flesh offers a richer, sweeter taste.
